Tha authors of this study underline the importnce of the human resources as a factor of existence and development in the catering industry of the 21st century. As a resoult, the startin point of this study is the role that human resources have in the new century and the chances of their realisation. Managment of the human resources in the hotel industry is being given great attention, both from the organisation and social aspect, stressing the individual and creational aspect of the human resources development. The research accomplished trough questionnaries during the year 2002 shows a noticeable this satsisfaction-coming from both foreign and domestic tourists, relating to qualitiy of services available on the Croatian part of the Adriatic area. This is the reason why far greater care should be dedicated to training of workers and to a permament education of employees especially to managers-as a solution to development of the Croatian hotel industry in the 21st century.
